First I ever heard of using soda as fluid substitute in a cake mix! I've tried using seltzer water to make Belgian Waffles but it seemed no better.

On the subject of less guilt, I generally substitute 1/2 applesauce for that portion of oil in brownie mixes and hardly notice a quality difference.
(the Ghirardelli mix from Costco is awesome!)

Not IMHO! If I were king, the misnomer of "white chocolate" would be banned! If it contains "chocolate" in the title, it had better be dark with a high cocoa content!

As far as the applesauce/oil ratio is concerned, try experimenting initially with a bit more oil to see if you can accept the outcome. I've settled on 50/50, but tastes will vary!
