So long story short, my sister got a GCC and has now given him to me.

Sprite is adorable. He'll roll on his back and loves scritches.

He's a young bird, I forget his age but under a year

Not DNA sexed

Recently he's been doing this thing where he'll bob his head up and down, but it's not really the same as the attention-getting bob, it almost looks like he wants to feed me but just but he never does. It makes a weird sound, like he's going to throw up, but he never seems uncomfortable afterwards

This sounds to me like a precursor to regurgitating for you. The reasons for this type of behavior as you describe it are ; 1) wanting attention, 2) hungry and wants more food and 3) regurgitating which is a bonding and/ or mating behavior.

My Sheldons under a year old too:green2:. He also did what you are explaining here. Not your typical head bob, but looks more like he wants to regurgitate. I talked with the vet about it when I had him in for his first checkup. He said it was normal and would eventually grow out of it. My conure would do that when he was playing with his ball at the bottom of the cage. Pushing it around would set off that motion. He would occasionally puke up some bits of food :11:(if thats the correct word for it). Lately I havent noticed that motion. Hope this helps. I'm not an expert, but this is what I found to be true for my bird.:22:

Should I be concerned about anything?

Thank you both

I would not be concerned about it .

It's not a good idea to encourage the behavior, however regurgitation in and of itself is not something to be concerned about - unless it becomes an excessive behavior.
