I have had excellent luck introducing pellets by simply having a dish for seeds and one for pellets, then taking away the seed at night, and gradually giving less seed less often. You have to make sure they are eating the pellets as you go along though. If she likes fruit, give her that in place of the seed for mealtimes. It may take time, and finding the right pellet. I went through many varieties with my parents' Severe, but we found one she loves, and used the extras in home made food for the birds.
I also trick birds into eating veggies, greens, and sprouts by hiding them in sandwiches or birch concoctions I make. Try sprinkling seed on whatever you hide the veggie stowaways in. If she likes human food, pretending that it's your food may make her want it more. Don't let her have it right away, tease her and pretend to eat it.
