Sweet Potato Bread

I have a very picky Eclectus Parrot who won't eat his Sweet potato. So I have tried four recipes from different websites and one finally worked. He loves it. He is 20 and we got him just over a year. Being an older parrot, set in his ways, I am very Happy he finally liked something.

I hope your feathery friends like it too.

Sweet potato bread

15 oz of sweet potato (baked, mashed)
4 oz of yogurt
1/2 cup applesauce
Some Ground Flax Seeds
1 Whole Egg (i used organic brown eggs)
1/4 of mango or carrot juice
2 tbls Quinoa
handful of Dried fruits and raw sunflower seeds.

I added enough flour to have a moist batter. approx 1 1/2 cup

Bake 30 mins @375 F

Purple yam is in season and I wonder if the same thing could be made with that as well.

Yam can absolutely be substitute.

What size pan did you use to bake it and did you grease the pan?
