But if they are unlisted, how can people watch them? That's what I want to know. That'd be great if I could do that, unlist them but still share them with people at my discretion!

"unlisted" simply means nobody will accidentally stumble upon your YT uploads while doing a search for something. And you can share the YT links with anyone and everything you want to. The links will work just fine.
