Hi guys. I made my two IRN's some sweet (fruit) muffins awhile back and they enjoyed them but they were pretty dry and the outer layer was kind of hard. I had to crumble them by hand first so they could eat. I want to make a lighter variety, in density, and was wondering if using self raising flour could help this and/or if this is safe for them. Any thoughts?

Self raising flour has a yeast add. Commonly used a short-cut when baking. Yeast by itself is save, it is aways worth the time to read the list of ingredients,
