I'm so glad you rescued that poor bird! It sounds like a big challenge, but it also sounds like you are doing a great job! I'd love to see some before/after pictures!

Congratulations on your progress with your GW. It sounds as if your GW is coming around. Keep up the great work.
If you want to start touching his beak, make a game out of it. If his beak is busy eating an almond, playing with a toy on your lap, use the toy to rub his beak so if he bites, he will bite the toy and not your fingers. My GW loves when I scratch his beak. The beak has veins in it so they can feel when it is being touched after a while of doing this, your GW may learn to enjoy it. Best of luck Joe
