Taming him will take a bit of time and patience.. Try offering him treats and getting him to step up on a stick for now, rather than your hand, until he becomes more used to you! Also make sure you provide him with plenty of toys to keep him occupied.
Just try a few small pieces of fruit each day, until you see what he likes! I normally put about 4 different types of fruit in each day.. 4 or 5 small pieces of each.
Hey Becca, My minni macaw was not really hand tame either, if you make sure his or her water bowl is big enough they will eventually have a splash in it a spray bottle wasn't an option for me cause it really frightened her and that wouldnt help building trust to get him or her tame, but your bird may be ok with it. try it out and see how she reacts to it, but if she doesn't like it - don't do it anymore and just leave her to bathe on her own accord in her bowl. make sure to clean the water bowl every day! other than that you will find tons of video's on youtube about hand taming your bird using positive reinforcement. birds don't react well to negative reinforcement and you may create an aggressive bird that way so just do a bit of research and you should be fine it's much like a child's psychology really... like Wenz said, it will take plenty of time and even more patience but it will be worth it in a few months
in regards to the fruit - the least waste full is to chop up a couple of pieces in small enough chunks that are easy for your bird to hold and freeze them in daily portions. just make sure to defrost them thoroughly overnight or something and feed them in the morning, but you'll find different people have different ways of managing the feeding mine don't always get frozen fruits, but they are handy to have in your freezer if your low on fresh fruits ( or veg! )
you can feed pretty much anything except for avocado, onion and any type of fruit seeds (like the ones in apples) they contain cyanide which are harmful for your bird. but you could easily find bird safe and non-safe listings of food for your bird online

other than these things on a daily basis there's the bed time routine, make sure your bird gets plenty of sleep, it varies for everyone , but 12 hours is what most websites would recommend ( though mine usually get about 8 or 9 hours and they are absolutely fine with it. but maybe since the bird is new for you he will have a lot to process every day so nothing wrong with giving him a bit extra rest think of it like a child that has been playing outside all day
