Freezing and Reheating

Apologies if the answer is really obvious - but when it comes to any kind of cooking, I need it spelled out for me.

Today I made my first birdie bread type thing, as my senegal has been getting bored with his dinners. He likes crunchy, rather than soft, so after cooking his rice, grains, beans, veggies etc - I mashed it up and cooked in shallow muffin tins, in the oven. Seemed to go down well.

Anyway, I don't really want to be doing this every day so want to make a batch and freeze. Now, I understand about freezing and then just getting one portion out the night before, putting it in the fridge to defrost. But then does it just go in the microwave to reheat, till it's warm - or do you have to cook it all the way through? I know some people say rice shouldn't be reheated, so am a bit confused. :eek:

What I do with my chop mix is make it, package it in individual baggies, freeze everything- each night 1 bag gets moved to the fridge and in the morning I zap in the microwave for about 10 seconds to bring it up to luke warm, pat out extra liquid with paper towels....make sure it's just luke warm/room temp- if it's too hot it'll burn the crop :(

With birdie bread I just set it on the counter to unthaw overnight and serve unheated.
 
I've eaten boiled white rice every day of my life, and most of those times I reheat it in the microwave. I've never gotten sick from it. I'm curious now why it said that it is bad to reheat them?

On very cold days I also microwave Boomer's chop mix for 5 seconds, but most days he gets it thawed direct from the refrigerator.

Thank you. With the birdie bread, I may not reheat it then. If I did reheat it right through, I'd make sure it had cooled again before giving.

Thanks. I think it's something to do with the bacteria in rice called bacillus cereus. It can cause food poisoning. I always thought it was an old wives tale about not to reheat rice, but there are lots of warnings online. Maybe I shall just give it at room temperature then and not reheat it.
