Food. Confused and overwhelmed

Ok, I got my little buddy about 2 months ago. He came from the pet store eating a brand of food that included everything from seed, sunflower seeds and pellets. Looked like a great mix. Then I noticed that he was mainly eating the sunflower seeds and safflower seeds. Alot of other seeds were left behind and I don't think any of the pellets were eaten.

I have read alot about feeding strictly pellets. I understand getting them to eat pellets takes alot of time. He will eat them but sparingly.

I hope to get him on all pellets but looking for some advice on what to feed in the meantime. I was feeding him safflower Gold and dusting it with vitamins. I picked it because it had no sunflower seeds. Are sunflower seeds bad? Should I stay away from them or just let him eat what he wants out of the mix. I'm looking for another mix that he will eat the variety out of but most include sunflower seeds. I'm thinking my question is a common one. With a little input I think I can make good decisions for Blaze.
 
When I switched my conure from seeds to pellets I just put pellets in his dishes and he started eating them within hours. If he doesn't eat the pellets be sure he gets plenty of vitamin K. Kale and carrot tops are a great source.
 
Sunflower seeds are high in fat, and it's a lot like giving a kid cookies or candy, they prefer that to the "healthy" stuff. In my opinion, one of the easiest ways to convert to pellets is one, going cold turkey, and moistening the pellets with a little fruit juice.

I'd say that conures can be some of the easier birds to convert to pellets, so I would try cold turkey. If you have a grinder or food processer, you can also grind up the pellets to make crumbles and make a mash with fresh fruit and veggies, so he gets used to the taste, then introduce whole pellets.
