I remember reading a recipe which was similar to this a few weeks before my Senegal came into my life, but for the life of me I could not find it again. It had looked amazing and I could not get it out of my head. So a few days ago I decided to improvise with what I remembered of that recipe and see what I could come up with, and if my Kippy's licked clean bowl is any indication, I think I did good. Here is a simple, quick, and easy recipe that can feed your FID's and any hungry significant others who might be prowling the kitchen!It actually tates delicious and is quite healthy! In my home it is called Senegal Surprise!
Shopping List; Adjust Ratios as Required:
(makes 4 cups minimum of Senegal Surprise)
1.5 lb Sweet Potatoes (I prefer the purple skinned Asian style sweet potato which can be found at most Korean markets.)
1.5 lb Pealed Carrots
1 Cup Couscous
1/2 Cup Quinoa (If not prerinsed, rinse before use.)
Instructions:
(Of course you know this BUT just in case...I would not advise cooking for your FID using Teflon or similarly coated cookware.)
1) Begin by bringing a large pot of water to a boil. Then carefully add in your carrots and sweet potatoes. Let them boil together until a fork can puncture the carrots and potatoes easily (don't worry if one gets super mushy, just make sure they are both at least "fork tender"), remove, drain, and let cool.
2) In a small skillet or pot bring 1 cup of water to a quick boil and add in the Quinoa; here you have two options let it boil for a minute or two and then let it simmer for about 20 minutes (or until it has absorbed all of the water) OR you can simply boil the Quinoa for about 15 minutes or until it has absorbed all of the water. Fluff lightly with a fork and then set aside when finished.
3) In a small skillet or pot (I just make the Couscous in the same skillet as the Quinoa, one after the other.) bring 2 cups of water to a boil and then add in your Couscous. Let it boil until all of the water has been absorbed and the grain is fluffy and light (5-10 minutes). Again, fluff the grains with a fork and then set them aside.
4) Using a fork, pestle, or similarly "HULK MASH" type object, squash the now cooled sweet potatoes and carrots into a beautiful mash of yellow and orange.
5) Mix your Quinoa and Couscous into the sweet potato and carrot mash, until evenly distributed.
5.5)(Optional but highly suggested) Run some of the warm mash out to your squawking FID and then to your significant other who may or may not be grumbling about how you are cooking for the Parrot and not for them.
6) Wrap the cooled extras into cling wrap balls or similar "serving portion baggies" and then place into freezer safe zip-lock bags and freeze. Thaw in the fridge and use as desired, cold or warm!
