My darling husband brought me a kitchen aid mixer for Xmas. I am pleased to say that it works very well and makes awesome brown sugar meringues.

I have been dying, waiting to try it out. But I just have not had the time since Xmas with unpacking and being back at work. Finally today I thought I would give it a try after I had made some seed treats for Bundii.

Hubby and I have just finished dinner and finished of with dessert of brown sugar pav's. Very yummy even if I do say so myself. :D

Me too. However I had never made one before. At least I can say that I have now.
 
....hmmmmm sounds good but for those of us who don't know what it is....care to share what it is?

I can't make a pav to save my life but luckily my mom is a cracker at it! :)

As it just so happens, i actually made smaller versions rather than the one large one, so I will take a couple of pics tonight when I dress them. They are just the meringues at the moment and as it is only 5.30 in the morning here, it is a wee bit early for pavlova.

Beth, as MomtoPercy's links show, it is just egg whites whipped and sugar addd as you go. In my case I was using brown sugar, which makes it taste like caramel. Yum! Then you dress it usually with whipped cream and fruits. But you can used whatever you like to top it. It's a bit of a traditional dessert for Aussies. However was first done in New Zealand however the Aussies have claimed it as their own.

I've never heard of making pav with brown sugar! Is it hard? I mean, I usually use caster sugar so it whips in easily. The brown sugar version must taste heavenly. What fruit did you use on top? I'm thinking ripe banana would go down well with the caramelly base. Eurgh! My mouth is watering as we speak! :D

PS. Won't be any cookin' goin' on in my kitchen for a while. Yesterday, the power point where the fridge is plugged in blew up and caught on fire not three feet from Dominic's cage! Luckily we were home and Hubby was quick with the fire extinguisher, but the whole house is covered in a thin film of greasy ash and green powder. Lots of cleaning up to do.

As soon as the fire was out, I grabbed Dommie and took him outside. Even so, we all got a great lungful of filth and I'm a bit worried about him, being a little bird and all. He absolutely doesn't like being outside and was sitting all fluffed up on his second-best perch when I got him up this morning. He's fine now, though. He's up in his rummage basket where he belongs, busily turning cardboard into confetti. I'll be watching him.
 
it looks devine!....it's unfortunate I'll never be able to eat it though, cocoa and vinegar give me massive migraines.

That must have been terrifying for you and Dominic, Trish! Thank goodness y'all were home and able to get the fire out. So glad he seems to be doing good today.

Wow Trish. Glad everyone/everybird is ok. That must of been a bit scary for you all. Glad Dommie is back to his usual self this morning. I don't think he would be too badly affected if you got him out side straight away. Lucky he has a wonderful mummy.

I don't envy you having to clean the mess up. Fire extinguishers make such a mess. Yucky. :(

The brown sugar is just as easy I believe. I have not ever made a pav before but had read a recipe about using brown sugar and figured I would give it a go. I love to potter about in the kitchen on the weekends making stuff. I usually just pick something that I have not done before and give it a go. I figure that you don't know unless you try.

Anyways, give Dommie an extra feathery hug from Bundii and also much squawkiness to the beaks :D

Beth there are recipes for pav's without both of those, you would just have to google it. The cocoa can be changed to vanilla and the vinegar can be left out altogether. The vinegar just stabilises the mix but it not essential.

Me too!! I've read that chocolate can cause migraines but I've never actually come across another person who gets them from chocolate!

I am lucky though - I am more sensitive to actual chocolate (slabs of choc) and I usually only have it in this pav and a chocolate cherry trifle I make. The pav contains very little actual chocolate but I have to take precautions when I make the trifle. It is a family favourite so I am expected to make it often ;). I don't enjoy eating straight chocolate (waaay to sweet and slippery on the tongue..blegh!) But I can't resist it in this pav! :)

Cocoa is less of a problem for me, lucikly! I still have to be careful but I can manage. I think the manufacturers do something to it when they make chocolate slabs and that is what really causes my migraines.

By the way - you don't *have* to make a chocolate pav. You can use any fruit:). I like it with grinadella (sp?) too.

Also, you don't have to use vinegar - the texture of the pav will be different but it can still work, especially for smaller ones. The vinegar helps to keep the meringue mixture more chewy.
 
Thanks, Amanda and Terry. Yeah, everyone seems back to normal now. Still a lot of cleaning up to do, but it's worth it to have everyone safe!

Momto, I used to get dreadful migraines from chocolate when I was younger. The headaches weren't all that bad, but the visual disturbances (flashing lights and 'whiting out' of my vision) were no fun at all. These days, I'll only get a mild headache and a bit of nausea if I have too much dark chocolate. I sure don't miss those migraines! They were bad! :(
