What Is The Safest Way To Cook Kidney Beans ?

I've got a dried bean mix. I keep reading totally different explanations as to the best way to make them 'safe' to eat, there are red kidney beans and other large beans in the mix. This is how I've been (forgive the unintentional pun) preparing them.
  • Soaking them in a glass bowl for 24 hours in bottled water that's been boiled & cooled
  • Rinsing them a few times with bottled water
  • Bringing them to the boil
  • Boiling for 10mins
  • Simmering for 1 hour
I read somewhere that I should simmer them for 2 hours! Is that over-kill? Do any of you know how long it should take, and what the best way to cook them?
 
Simmer to the point where you like to eat them! Not too low of a simmer! Beans are toxic if cooked at a low temperature! 12 hour soak is plenty.
