I went to the store this afternoon and Simba started getting chatty. My gf recorded most of it. It is pretty darn long, 9 minutes, so skip through parts if you don't want to watch all of it. He doesn't know that many words! LOL!
It's that long because I didn't take the time to learn the video editing software. Maybe someday...
Around the 7:00 minute mark he starts saying, "c'mon, step up".

I LOVE his laugh!!!! The second I heard it, Simba had ME laughing!!! :D

I really think he wanted to come out and play with your GF. ;)

Yes, unfortunately, he's supposed to be MY bird! She wants nothing to do with handling a bird that size.

My mother also has the same opinion about handling large birds.
 
Simba seems like a great additional to your home. Seems like he's going to be lively and keep you smiling. He sure is putting on quite a show for your gf. His laughs are great. There are a few different laughs that he has down pat. Thanks for posting the video, I really enjoyed it.

I think I heard him saying:

"come'ere"
"step up"
"wanna step up"
"c'mon step up"
around 4 or 4.5 mnutes:
sounds like "?_____? for me" at around the middle just after lots of laughing.
"come back"
"hi"
"what's your name"
sounds like "what are you doing there" or "hey you there"
"what's that"
"who's there"

Did I hear him say "don't bite" followed by "ow" at around 8:15?

You've got a good ear! Pretty much everything you listed is what he says or what we've been told he says. He knows the phrase "don't bite" but it doesn't stop him.
 
It seems like Simba is fitting in. He sure wanted to get you or your girlfriends attention. Captain Jack will start mumbling or say stuff to get attention to.

To be fair Macaws can be intimidating to some people. I find them beautiful but would try to be careful around them. Maybe after getting use to Simba she might be more open to him.

My mom seems to think macaws or toos are the devil incarnated (because of stories she heard). She will handle Captain Jack (but he is a mini macaw).
