Questions about my GCC

as we've had haymitch my male GCC, i've noticed a few things about him that i don't understand that maybe you guys could help tell me about if its a common thing these parrots do.
1- he will get on his tippy toes (in his cage, on a perch or on the couch) and push his beak up against it while fluttering his wings.. is he trying to tell us he wants to go somewhere?
2- he is very wiling to step up on our hands, shoulders, and even occasionally a head and hangout but seconds later he starts to bite and nip at our clothes or skin, how do we stop that?
3-he's quite a picky eater. this afternoon i was trying to do a little bit of trick training( mainly just stepping up and seeing if he'd touch the training stick) and we offered him sunflower seeds but he didn't seem interested in them at all, but there are sunflower seeds in his food mix. is he just being stubborn?
I'm pretty new to this bird owning life and have lots of questions about everything, so it would be very appreciated if you guys answered my silly questions, haha.

Bird explore things with their beaks, and they like to preen us, and try and remove freckles, scabs, or spots as they feel they must be parasites and want to save us

I use safflower seeds instead of sunflower seeds. My GCC is crazy about them sbd it doesn’t matter that they are also in her seed mix lol she is CRAZY fir them!! But training has to be very short session, she is willing to to work fir about 4 seeds then she is over it. So I give her break and maybe a half hour or longer we try again

If your burd hadn’t fledged and learned to fly. Then that’s probably what he is trying to do, it programmed into them and it’s a way to build flight muscle. Please don’t clip a young bird that hasn’t fledged and learned to fly, even tho yiu have to be extra careful about escaping. They are only programmed to fledge as babies . Adults don’t have that programmed drive that helps them get over the fear of falling, so it’s very difficult fir adults to ever learn to fly
