Are great white northern beans ok for eclectus if cooked or if sprouted?

Yup perfectly safe.

They've gone through various stages of popularity though. In 1970 for example people were filled with The Great White Hope, but it was a phase that soon passed. Then in 1996 popularity skyrocketed again for a short time in what was called The Great White Hype. Since then they've been almost completely knocked out by the darker bean varieties.
