How to get him to eat...

How do I get my 11mo to eat things other than soaked carrot and millet? He'll pick up everything else and then toss it. Everything is either too big for him to want to bother or he just doesn't like it in some way and onto the floor or ignored it goes.
Ideas? Tricks?
 
To get my GCC to eat new things, i'll eat it in front of him. If he sees me eating something he's immediately intrigued and comes down for a taste test.

Well, he'll taste test anything I hand offer, but rarely will he actually eat any of it.
We bought some green pepper, broccoli, cucumber and carrot. He nibbled on all of it but I'm pretty sure nothing but carrot he got down.
How long can fresh chopped foods sit out before I have to dump them?

Well, my fiance and I stood in front of Cipher's cage and hand fed him some things. He wastes most of the food he does eat and then tosses all that he doesn't like.
He'll open and eat sunflowers, but not pumpkin seeds. He loves the carrots, tries anything orange in color hoping it is a carrot. He sort of eats hard corn, maybe he would eat fresh corn.
He seems to be asking me to take him to the water...makes me wonder if he's drank any at all when he's in there on his own...
Bananas are still icky and sticky, dried or fresh. He attempted to eat the broccoli bits, but other chopped up bits were gross to the spoiled brat, the pepper & cuke.
He's pretty good at being quiet, he'll squawk a bit after I leave, but I have a brick chimney in the middle of the room to hide behind and he calms down. Though, if he's free on his cage, he will fly and seek me out. =D

I guess that's progress. He's got 4 different places to get food from, a cocco nut toy up on the roof, two trays at the front and a bowl on the ground. Water is between the two trays and another is on the ground.

He seems to like my fiance just as much, so far, a total people bird. But hates it when we try and get him off our shoulders. We need slim ear muffs to hide our super exciting ears from him!

Good news, everyone!

Looks like he is trying to eat on his own! He's spent more time in his cage today, will also be like that until Sunday. Since my fiance is home all day and I don't want Cipher getting spooked and flying off from his activities.

He's been eating whole cubes of the orange colored dried fruit, maybe it's pomegranate or something. He'll also nibble the yellow star bits, possibly other things while I'm not spying on the little fellow.

He weighed in at 76 or 79g. I couldn't tell because he wouldn't sit still on the scale, he heard the dog and my fiance coming down the steps and he was like, "Nope! Pick me up!". I was also reading it upside down. But that's either 2g or 5g more than he weighed yesterday at 74g. I'm hoping it's because he's actually eating and being a good little booger!
