Where do you guys get your mesh wire from? I feel like I’ve searched all over the place. Also is there anyway to make galvanized metal safe?

I don't know exactly what you need, so let me know if this isn't helpful, but here's what I could find for mesh wire:
Never use galvanized steel around birds, because it is coated with zinc, which is toxic to birds. I don't know if there is a way to make it safe, so sorry. But this is all I could do for you, so I hope I helped :)

And this is safe to make an outdoor aviary? I think my ekkie needs more outdoor time next summer.

Is there a difference between galvanized steel and hot dip galvanized wire? It says it’s hot dip galvanized, I’m very new at all this so I just want to make sure I get it right!

Stay away from "galvanized" metals; not healthy for your bird(s). Stay with stainless steel. Here is a company that can make anything you need: Edward J. Darby & Son, Inc. Phila., PA: Tel: (215) 236-2203.
