I'd like to make a cage cover but I'm not quite sure what material to make it out of.
I used to use an old sheet but I'm not sure it'll be enough.

I suggest 100% cotton, or a poly-cotton blend broadcloth. Typically categorized as Quilt fabric.

You want to be sure it's nice and breathable.

I’m using a dark cotton blanket, it seems to work.
Cage covers are quite expensive honestly... just make sure that he can breathe

Jose :)

Before considering a bed sheet, please know my beloved goffins "Abby" nearly hanged himself.

He and a brother lived in same cage when younger, and were in a room without window coverings. I started covering with a sheet at night and happened to pass the area several days later and heard a commotion. Abby had drawn a section of sheet into the cage, chewed a hole, and somehow inserted his head. The sheet twisted and he was panting, struggling for air while dangling by one foot. Grabbed scissors and cut the offending material, thankfully he was not injured. Last time I covered a bird at night.

Thank you for letting me know!
I hadn't considered that at all but that is a very serious and important point.
