Great Cornbread Muffins-
2 Cups Cornmeal - 1 Egg, including shell - 1/2 Cup Apple Sauce - 1/2 Cup Apple Juice - 1/3 Cup Chopped Mixed Veggies - 1/3 Cup Diced Carrot - 1/3 Cup Cooked Rice - 1/3 Cup Chopped Nuts -
Mix all items together. If the mix is too dry add water until it reaches the proper consistency. Pour mix into each tin in a muffin sheet. Bake in a 350 Degree Fahrenheit oven for 40-50 minutes or until a toothpick inserted into the center of each muffin comes out clean. Muffins may be stored and frozen for later use.
