Acclimation with new food

Yay! We have a new baby! Though he's not really a baby, he's a 16 year old Severe Macaw named Mason. His former owner researched us, and then contacted us regarding donating him to the resort because he and his wife could no longer care for sweet Mason and it was causing a strain in their marriage (apparently). We were told that Mason does not eat pellet food (our afternoon feeding), but instead came with a variety of sunflower seeds and noodles and the such. How best should we go about acclimating him to the pellet food?

I would just drop some in his dish (I counted how many I put in for Zilla at first to see if she was eating/tossing them) You never know until you try, he might like them!

If he doesn't eat them dry you can moisten some with water or fruit juice to get him to try them soft.

Keep offering them daily and maybe in time he will start to see them as food.
 
This is especially true if he can see other parrots eating them. I would suggest feeding a slightly larger (not double, just a little extra) of whatever you feed at breakfast to help him out while he adjusts to his strange afternoon meal.
